SILVIA is a family-owned restaurant that connects food & people with back-to-basics cooking that is honest, sustainable, and refined.

Our open kitchen, with a wood-fired grill and pantry of organic vegetables, reflects our dedication to locally-sourced ingredients.

When we opened in the summer of 2017, this was our 1st restaurant. We were committed to our belief that sustainable food is a pleasure, and that international touches enhance our enjoyment of New York state meats & vegetables. Our guests responded by coming back again & again.

We believe that food & drink should bring people together; that the person dining solo at our bar and group of friends celebrating an occasion at a long table are all seeking more than a carefully plated dish or bespoke cocktail. They’re seeking what we’re seeking: a connection to the bounty of the Hudson Valley and Catskills, and the centuries-long dialogue between our region & the wider world.

Our beef is locally-sourced, 100% grass fed & finished. Chicken, lamb, & eggs are pasture-raised. Seafood is sustainable. Milk is local. Produce is locally-sourced and organic whenever possible. Our pantry is GMO-free and additive-free.

In our wine and spirits list, we favor small producers and natural winemakers, both Old and New World. Most of our bottles are organic, and many biodynamic, whether certified or not.

In the fall of 2021, we opened a second restaurant, Good Night, on Rock City Road, just a five minute walk away in the historic village of Woodstock. As we watch it grow, we remain committed to keeping the fire alive here at Silvia.
