At our restaurant, we believe in the art of crafting every dish to perfection. Embracing the philosophy that good food takes time, we invite you to sit back and relax. Every meal is made to order, ensuring a culinary experience that’s fresh, flavorful, and worth the wait.

Our menu is inspired by local and seasonal ingredients, which changes frequently ensuring a fresh and exciting culinary experience.

We chose to name our restaurant after this Aesop’s Fables classic for its moral depiction of resilience. It is incredibly relevant as the City of Middletown has made great strides towards revitalizing the area, sparking a Renaissance in the Lower Hudson Valley. It also represents how we as a restaurant conduct business, with humility and flexibility. After all, it is our City too and we take pride in serving our neighbors.
